but actually though

  • Normal people: I can't wait to have my own place so I can stay out late, get drunk and be as loud and messy as I want.
  • Me: I can't wait to have my own place so I can buy my own food and organise my fridge and kitchen and cook awesome healthy meals in it and have a closet dedicated to workout gear and my own little yoga space and motivational/feel-good things everywhere omggg.

There are a lot of vegan alternatives to baking without eggs.
Special thanks to Happy Herbivore for the egg substitute cheat sheet. (Click to download)
Super helpful. It’s a little hard to read the file on Instagram, so here are all the options and instructions:
1/4 c. silken tofu (2 ounces)
Blend with liquids. Can be very heavy. Do not use in recipes where multiple eggs must be replaced.
1/2 banana, mashed
Very ripe bananas will leave a hint of flavor and increase sweetness.
1/4 c. applesauce
Add with wet ingredients. Avoid using more than 1 cup of applesauce total in any recipe.
1/4 c. vegan yogurt
Blend with liquid or wet ingredients. Can be heavy.
2 tbsp ground flax seeds mixed with 3 tbsp water
Add as “egg” is originally called for. Adds an earthly, nutty taste. Can provide firm or chewy texture.
2 tbsp water + 1 tbsp oil + 2 tbsp baking powder
Add as “egg” is originally called for. Adds fat; can be tricky to work with.
2 tbsp potato starch
Add as “egg” is originally called for.
2 tbsp water + 2 tbsp white flour + 1/2 tbsp shortening + 1/2 tbsp baking powder
Add as “egg” is originally called for. Adds fat; can be tricky to work with.
2 tbsp oil + 1 tbsp water
Add as “egg” is originally called for. Adds fat; Do not use in recipes where multiple eggs must be replaced.
1 tbsp cornstarch + 3 tbsp water
Add as “egg” is originally called for. Not the best for baking; expect mixed results. Use in savory dishes, like corn pudding and casseroles.
Ener-G-Egg Substitute
Add as “egg” is originally called for. Leaves a chalky taste. One box is the equivalent of 100 eggs so it’s a good investment as well.

Healthy Peanut Butter cookies!
Only 36 calories per cookie!
Ingredients:
1 Cup Peanut butter
1 Cup Sugar
1 TSP baking soda
1 egg
Directions:
Mix the peanut butter and sugar first then add in the egg and baking soda. Bake for 10 minutes on 350 degrees. They’re delicious!

I just did this tonight!!!

I was really worried that because it didn’t require butter or flour or anything that they wouldn’t be soft or yummy or anything
NO, NO TRUE AT ALL, THESE ARE AMAZING. I suggest waiting 15 minutes or so to cool, but they are SO GOOD. OMG.

i want to try making these!

i made these with 3/4 cup of sugar instead of 1 cup and they were amazing

really want to try those!
